Ingredients

Salad Ingredients

  • 4 cups fresh broccoli florets
  • 2 medium Honeycrisp apples (Diced just before mixing for freshness)
  • 1/2 cup red onion, finely chopped
  • 1/2 cup dried cranberries or raisins
  • 1/4 cup sunflower seeds or chopped nuts

Optional Add-Ins

  • 1/2 cup cheese (cheddar or feta), optional
  • 1/4 cup bacon bits, optional

Dressing

  • 1/2 cup mayo or Greek yogurt
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • to taste salt and pepper


Instructions

Preparation

  1. Chop broccoli into small, bite-size florets and slice any tender stem thin.
  2. Dice Honeycrisp apples right before mixing, to keep them fresh.
  3. Chop red onion finely to ensure it does not overpower every bite.
  4. In a separate bowl, whisk together the dressing ingredients.

Assembly

  1. Toss the chopped broccoli with the dressing first.
  2. Fold in the diced apples, dried fruit, and crunchy add-ins.
  3. Chill in the refrigerator for 20 to 30 minutes if time permits, then taste and adjust seasoning.

Notes

Keep broccoli dry before dressing. Mix apples in last to maintain texture. This salad can be made ahead; just store components separately until serving.
