Description

A creamy, crunchy salad featuring fresh broccoli and apples, perfect for potlucks and meal prep.


Ingredients

Main Ingredients

  • 5 to 6 cups Fresh broccoli florets, chopped small
  • 2 medium Crisp apples, chopped (Honeycrisp recommended)
  • 1 cup Shredded carrots (optional)
  • 2 to 3 tablespoons Red onion, finely chopped
  • 1/2 cup Dried cranberries
  • 1/2 cup Sunflower seeds or chopped pecans

For the Dressing

  • 1/2 cup Mayo, or half Greek yogurt
  • 1/2 cup Plain Greek yogurt (optional) (Adds tang)
  • 1 tablespoon Apple cider vinegar
  • 1 to 2 tablespoons Honey or maple syrup, to taste
  • Salt and black pepper, to taste


Instructions

Preparation

  1. Chop the broccoli into small bite-sized florets. Also, chop the apples to be about the same size.
  2. In a small bowl, whisk together mayo, Greek yogurt (if using), apple cider vinegar, honey, salt, and pepper. Adjust sweetness and tang to taste.

Assembly

  1. In a large bowl, combine broccoli, apples, carrots, onion, cranberries, and seeds.
  2. Pour in the dressing and toss until everything is coated.
  3. Chill for at least 20 to 30 minutes to let the flavors meld.

Notes

For extra crunch, add apples just before serving. Store in an airtight container in the fridge for up to 3 days.
