Ingredients
Main Ingredients
- 2 cans White beans (drained and rinsed) or about 3 cups cooked beans (Cannellini, Great Northern, or Navy beans can be used.)
- 2-3 tablespoons Olive oil
- 4-6 cloves Garlic (minced or thinly sliced)
- 1 small Onion or shallot (chopped)
- 1.5 cups Broth (vegetable or chicken) (Low sodium recommended.)
- 1 whole Lemon (zest plus juice) (Juice only if in a rush.)
- to taste Salt and black pepper
- to taste Red pepper flakes (optional) (For added heat.)
- 2 big handfuls Arugula (To add freshness.)
- to taste Parmesan (optional, for serving) (For added richness.)
Optional Enhancements
- 1 splash Cream or a knob of butter (For extra richness.)
Instructions
Flavor Base
- Warm olive oil in a medium pot over medium heat.
- Add the onion and cook for about 3 to 5 minutes until it softens.
- Add the garlic and stir for about 30 seconds to 1 minute until fragrant, making sure it doesn’t brown.
Braise the Beans
- Add the beans, broth, a pinch of salt, pepper, and red pepper flakes if desired.
- Bring to a gentle simmer, then lower the heat and let it bubble softly for 12 to 18 minutes, stirring occasionally.
- Mash some of the beans against the side of the pot with the back of your spoon for a creamy texture.
Finish and Serve
- Turn off the heat and stir in the arugula until it wilts.
- Add lemon zest and lemon juice, then taste and adjust salt as necessary.
- Drizzle with olive oil before serving.
Notes
This dish is very forgiving and flexible. Feel free to substitute arugula with baby spinach, kale, or parsley, and add in your choice of protein or herbs for variation.
