Ingredients

Main Ingredients

  • 2 large Chicken breasts (Or 4 small cutlets)
  • 1 cup Blueberries (Fresh or frozen)
  • 1 tablespoon Fresh thyme (Or dried in a pinch)
  • 2-3 cloves Garlic (Minced)
  • 1/2 cup Chicken broth (Or water plus a tiny bit more salt)
  • 1 tablespoon Balsamic vinegar or lemon juice (For brightness)
  • 1-2 tablespoons Honey or maple syrup (Just enough to round it out)
  • to taste Salt and black pepper
  • 1 tablespoon Olive oil or butter
  • a pinch Red pepper flakes (Optional)


Instructions

Preparation

  1. Pat the chicken dry and season both sides with salt and pepper. If the breasts are thick, slice them into cutlets so they cook faster and stay juicy.
  2. Heat olive oil (or a mix of oil and butter) in a skillet over medium-high heat. Sear chicken 3 to 5 minutes per side until golden. Move it to a plate.

Sauce

  1. Lower heat to medium. Add more butter if the pan looks dry. Add garlic and stir for about 30 seconds.
  2. Add blueberries, a splash of broth, honey, and a small splash of balsamic or lemon juice. Add thyme. Let it bubble gently and use a spoon to lightly smash some berries so the sauce thickens.

Finish Chicken

  1. Put the chicken back in the skillet and spoon sauce over it. Simmer 5 to 8 minutes, flipping once, until the chicken is cooked through and the sauce looks glossy.
  2. Taste and adjust seasoning, adding more salt or vinegar/lemon juice if necessary.

Notes

Cutlets cook better and stay tender. Do not rush the sauce; let the blueberries break down for thickness. Season in layers for deeper flavor.
