Description

A fast, crunchy, creamy, and salty chicken salad that’s perfect for a satisfying lunch without being heavy. Easy to prepare with simple ingredients from any grocery store.


Ingredients

Main Ingredients

  • 2 cups cooked chicken, chopped or shredded (Rotisserie chicken works great.)
  • 4 strips bacon, cooked until crisp and chopped
  • 4 cups romaine lettuce, chopped (Any crisp lettuce works.)
  • 1 cup grape or cherry tomatoes, halved (Less watery, holds up better.)
  • 1/4 cup red onion, diced (optional) (A little goes a long way.)

Dressing Ingredients

  • 1/2 cup Greek yogurt or mayonnaise (Mix of both is also an option.)
  • 1 tablespoon Dijon mustard (Adds zip without making it heavy.)
  • 2 tablespoons lemon juice (Brightens everything up.)
  • to taste salt and pepper (Always adjust to taste.)


Instructions

Preparation

  1. Cook and cool your bacon. If in a rush, cook bacon in a skillet and lay it on paper towels to cool.
  2. Chop the chicken into bite-sized pieces for a hearty deli salad feel.
  3. Mix the dressing by stirring together Greek yogurt or mayo, Dijon mustard, lemon juice, salt, and pepper in a bowl. Adjust to taste.
  4. Combine the chicken, bacon, and tomatoes with the dressing until everything is coated.
  5. Fold in chopped romaine right before serving to maintain its crunch.

Notes

For meal prepping, keep the lettuce separate to maintain crunch. This salad stays fresh for about 3-4 days in the fridge if stored in an airtight container.
