- 1/4 cup red onion, diced (optional) (A little goes a long way.)
Dressing Ingredients
- 1/2 cup Greek yogurt or mayonnaise (Mix of both is also an option.)
- 1 tablespoon Dijon mustard (Adds zip without making it heavy.)
- 2 tablespoons lemon juice (Brightens everything up.)

Preparation
- Cook and cool your bacon. If in a rush, cook bacon in a skillet and lay it on paper towels to cool.
- Chop the chicken into bite-sized pieces for a hearty deli salad feel.
- Mix the dressing by stirring together Greek yogurt or mayo, Dijon mustard, lemon juice, salt, and pepper in a bowl. Adjust to taste.
- Combine the chicken, bacon, and tomatoes with the dressing until everything is coated.
- Fold in chopped romaine right before serving to maintain its crunch.
Notes
For meal prepping, keep the lettuce separate to maintain crunch. This salad stays fresh for about 3-4 days in the fridge if stored in an airtight container.
