Ingredients

Units Scale

Main Ingredients

  • 1 large butternut squash, peeled and cut into small cubes (Pick a squash that feels heavy for its size.)
  • 2 cups black beans, canned or cooked from dried (Rinse well if using canned.)
  • 1 medium onion, diced (Helps to build flavor.)
  • 3 cloves garlic, minced (Sauté to enhance flavor and aroma.)
  • 1 tablespoon tomato paste (Adds depth of flavor.)
  • 1 can coconut milk, full fat (Provides creaminess.)
  • 4 cups vegetable broth (Can use bouillon mixed with water.)

Spices

  • 1 teaspoon smoked paprika (For a subtle smokiness.)
  • 1 teaspoon cumin (Adds earthy flavor.)
  • 1/2 teaspoon chili flakes (Adjust for spice preference.)
  • Salt to taste (Beans soak up salt, adjust accordingly.)
  • Black pepper to taste

For Brightness

  • 1 tablespoon lime juice or vinegar (To enhance flavor at the end.)

For Greens

  • 2 cups collard greens or substitute (Can also use kale, spinach, or Swiss chard.)

Instructions

Preparation

  1. Heat a little oil in a large pot over medium heat and add the diced onion. Sauté until translucent.
  2. Add minced garlic and sauté briefly until fragrant, about 30 seconds.
  3. Stir in tomato paste, smoked paprika, cumin, and chili flakes for about one minute.
  4. Add the cubed butternut squash, vegetable broth, and coconut milk to the pot.
  5. Bring the mixture to a gentle simmer then reduce the heat. Allow to simmer until the squash is fork tender, about 15 to 25 minutes.
  6. Add black beans in the last 5 to 10 minutes of cooking, especially if using canned beans.

Finishing Touches

  1. About 8 to 12 minutes before serving, stir in the collard greens (or your choice of greens).
  2. Taste the stew and adjust seasoning with lime juice, salt, or additional spices as desired.

Notes

This stew tastes better the next day and can be stored in the fridge for 4-5 days or frozen for up to 2-3 months.
