  • 1 lb ground beef (or ground turkey, chicken, or a plant-based crumble) (Choose your preferred protein.)
  • 1 packet taco seasoning (Store-bought or homemade can be used.)
  • 1 cup salsa or diced tomatoes (For moisture and flavor.)
  • 1 can black beans (Optional but adds filling.)
  • 1 cup corn (Can be frozen, canned, or leftover.)
  • 1 cup cheese (cheddar, Monterey Jack, or a Mexican blend)
  • 1 bag Doritos (Nacho Cheese or Cool Ranch) (Use as a topping.)

Toppings

Instructions

Preparation

  1. Cook the rice. Use a rice cooker or microwave rice, or reheat leftover rice.
  2. In a big skillet over medium heat, cook the ground beef until no longer pink. Drain extra grease if needed.
  3. Sprinkle in taco seasoning and add a splash of water. Stir in a few spoonfuls of salsa to keep the meat saucy.
  4. Toss in rinsed black beans and corn, heating through for 2 to 3 minutes. For extra cheesiness, stir in cheese until melted.
  5. Build your bowl by layering rice on the bottom, taco meat mixture on top, then cheese, then toppings. Crush Doritos over everything just before serving.
