Instructions
Preparation
- Lightly grease your slow cooker or use a liner for easy cleanup.
- Season the chicken with salt and pepper on both sides.
- In a bowl, whisk together honey, Dijon mustard, garlic, onion powder, a splash of chicken broth, and melted butter or olive oil.
- Add the seasoned chicken to the slow cooker and pour the sauce over the top. Flip the chicken once to coat.
Cooking
- Cook on low for 4 to 6 hours for thighs or 3.5 to 5 hours for breasts, until tender.
- For a thicker sauce, stir in a cornstarch slurry near the end of the cooking time and let it warm through.
Serving
- Shred the chicken and mix it back into the sauce for extra flavor if desired.

Avoid using too much liquid. The chicken releases juices, so a small splash of broth is sufficient. For a creamy sauce, add dairy after cooking.
