- 2 tablespoons olive oil
- 1 tablespoon butter (Adds richness.)
- 3-5 cloves garlic, minced
- 1 cup chicken broth
- 3/4 cup heavy cream (Or substitute with half and half for a lighter sauce.)
- 1/2-3/4 cup Parmesan, freshly grated (Freshly grated preferred for smoother sauce.)
- 1 handful fresh basil, chopped (Add at end for freshness.)
- 1 tablespoon lemon juice or zest (Optional for added brightness.)
Instructions
Preparation
- Slice the chicken breasts in half lengthwise to create thinner cutlets and pat them dry.
- Season chicken with salt, pepper, and Italian seasoning, then lightly dust with flour.
Cooking
- Heat olive oil and butter in a large skillet over medium heat. Cook chicken for 3 to 5 minutes per side until golden and cooked through. Remove from pan and set aside.
- Lower heat slightly, add a bit more butter if the pan looks dry, and sauté minced garlic for about 20 to 30 seconds.
- Pour in chicken broth, scraping the browned bits from the pan to flavor the sauce.
- Stir in heavy cream and sprinkle in Parmesan gradually while stirring, keeping it at a gentle simmer.
- Add chopped basil at the end and stir until just combined.
- Return the chicken to the pan, spooning sauce over it for 1 to 2 minutes before serving.
Notes
If using chicken thighs, they stay juicier but take a bit longer to cook. Fresh basil is best, but dried basil can substitute. Taste before adding additional salt due to salty ingredients.
