- 1 pound Ground beef (Lean is easier, but any works.)
- 2 cups Bell peppers (Mix of red and green preferred.)
- 4 cups Cooked rice (Fresh or leftover.)
- 1 large Onion (Optional, but adds sweetness.)
- 2 cloves Garlic (Fresh or jarred.)
Sauce Ingredients
- 3 tablespoons Soy sauce
- 2 tablespoons Hoisin sauce or oyster sauce (Either one works.)
- 1 tablespoon Rice vinegar or lime juice (For acid.)
- 1 tablespoon Brown sugar or honey (For sweetness.)
- 1 teaspoon Sesame oil (A few drops goes far.)
- 1 teaspoon Cornstarch (Optional, for thickening.)
- to taste Salt and black pepper
- to taste Crushed red pepper or sriracha (For heat.)
Toppings
- 2 stalks Green onions (Sliced for topping.)
- to taste Sesame seeds (For garnish.)
Instructions
Preparation
- Cook rice if you have not already. Set it aside and keep it warm.
- Slice your bell peppers into thin strips. If you are using onion, slice that too.
Cooking
- Heat a large skillet over medium high heat. Add ground beef and cook until browned, breaking it up as you go.
- Drain excess grease if needed, but leave a little for flavor.
- Add garlic and onion (if using). Cook about 30 seconds to 1 minute.
- Toss in the peppers and cook for 2 to 4 minutes, keeping them tender but still a bit snappy.
- Pour in the sauce and let it bubble for 1 to 2 minutes until glossy.
Serving
- Spoon rice into bowls, pile on the beef and peppers, then top with green onions and sesame seeds.
Notes
You can customize this bowl by adding extra toppings like sriracha, avocado, or a fried egg. For meal prep, keep rice and beef mixture separate to maintain texture.
