Ingredients

Main Ingredients

  • 1 pound Chicken (breast or thighs) (Choose based on preference for lean or juicy)
  • 2 medium Sweet potatoes (Cut into small, even cubes for best cooking)
  • 1 cup BBQ sauce (Store-bought or homemade)
  • 2 tablespoons Olive oil or avocado oil
  • 1 medium Onion (Optional but recommended for flavor)
  • 2 cloves Garlic (Can be fresh or powder)
  • 1 teaspoon Smoked paprika or chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Cheese (cheddar, mozzarella, or pepper jack) (Shredded)
  • 2 tablespoons Green onion or cilantro (For topping)
  • 1 squeeze Lime (Optional garnish)
  • 1 tablespoon Greek yogurt (Optional topping)


Instructions

Cooking

  1. Heat a large skillet over medium heat and add a little oil.
  2. Add sweet potatoes with salt, pepper, and smoked paprika. Cook for 10 to 15 minutes, stirring occasionally, until they are mostly tender and getting browned edges.
  3. Push sweet potatoes to the side. Add diced chicken and season with a little more salt and pepper. Cook until the chicken is mostly done.
  4. If using, add onion and garlic, and stir everything together for 1 to 2 minutes.
  5. Pour in the BBQ sauce and stir. Let it simmer for 2 to 4 minutes so it thickens and coats everything.
  6. Sprinkle cheese on top, cover the skillet, and cook for 1 to 2 minutes until melted.
  7. Top with green onions or cilantro and serve hot.

Notes

This dish is flexible; consider adding bell peppers or spinach for extra veggies. Leftovers can be stored in the fridge for 3 to 4 days and reheated easily.
