Ingredients
Main Ingredients
- 1 pound Chicken (breast or thighs) (Choose based on preference for lean or juicy)
- 2 medium Sweet potatoes (Cut into small, even cubes for best cooking)
- 1 cup BBQ sauce (Store-bought or homemade)
- 2 tablespoons Olive oil or avocado oil
- 1 medium Onion (Optional but recommended for flavor)
- 2 cloves Garlic (Can be fresh or powder)
- 1 teaspoon Smoked paprika or chili powder
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 cup Cheese (cheddar, mozzarella, or pepper jack) (Shredded)
- 2 tablespoons Green onion or cilantro (For topping)
- 1 squeeze Lime (Optional garnish)
- 1 tablespoon Greek yogurt (Optional topping)
Instructions
Cooking
- Heat a large skillet over medium heat and add a little oil.
- Add sweet potatoes with salt, pepper, and smoked paprika. Cook for 10 to 15 minutes, stirring occasionally, until they are mostly tender and getting browned edges.
- Push sweet potatoes to the side. Add diced chicken and season with a little more salt and pepper. Cook until the chicken is mostly done.
- If using, add onion and garlic, and stir everything together for 1 to 2 minutes.
- Pour in the BBQ sauce and stir. Let it simmer for 2 to 4 minutes so it thickens and coats everything.
- Sprinkle cheese on top, cover the skillet, and cook for 1 to 2 minutes until melted.
- Top with green onions or cilantro and serve hot.
Notes
This dish is flexible; consider adding bell peppers or spinach for extra veggies. Leftovers can be stored in the fridge for 3 to 4 days and reheated easily.
