For the Chicken

For the Sweet Potatoes
- 4 medium sweet potatoes (Cubed for roasting.)

For the Slaw
- 4 cups shredded cabbage or a bagged slaw mix
- 1/2 cup mayo (Use compliant mayo if necessary.)
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tsp salt
- 1 tsp pepper
For the Dill Pickles
- 4 medium cucumbers (For pickling.)
- 2 tbsp fresh dill (Can use dried dill.)
- 1/2 cup vinegar
- 1 tbsp salt
- 2 cloves garlic
- 1/2 tsp red pepper flakes (Optional for heat.)
Instructions
Prepare the Chicken
- Cook chicken in your preferred method (Instant Pot, slow cooker, or stovetop) until very tender.
- Shred the chicken with two forks and toss with BBQ sauce in the pan.
- If sauce is thick, add a splash of water or broth to loosen.
Roast the Sweet Potatoes
- Preheat oven to 400°F (200°C).
- Cube the sweet potatoes and toss with oil, salt, and optional smoked paprika.
- Spread out on a baking sheet and roast until tender with browned corners, about 25-30 minutes.
Make the Dill Pickles
- Slice cucumbers into spears or coins.
- Warm vinegar with salt and a little water, then pour over cucumbers with dill and garlic in a jar.
- Let sit in the fridge while preparing the other components.
Prepare the Slaw
- Mix mayo, apple cider vinegar, Dijon mustard, salt, and pepper in a bowl.
- Stir in the shredded cabbage and let it sit for about 10 minutes.
Assemble the Bowls
- Start with a base of roasted sweet potatoes.
- Add shredded BBQ chicken on top.
- Include coleslaw and dill pickles on the side.
