Description

  • 1.5 pounds Boneless skinless chicken thighs (You can use bone-in thighs, but they will take longer to cook.)
  • to taste Salt and black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1/4 cup Cornstarch (For a light crispy coating.)
  • 2 tablespoons Neutral oil (like avocado or canola)

Bang Bang Sauce

  • 1/2 cup Mayonnaise (The creamy base for the sauce.)
  • 1/3 cup Sweet chili sauce
  • 1-2 teaspoons Sriracha (Adjust according to heat preference.)
  • 1 teaspoon Lime juice or rice vinegar
  • to taste Honey or sugar (optional) (For sweetness if preferred.)

Instructions

Prepare the Sauce

  1. In a bowl, stir together mayo, sweet chili sauce, sriracha, and lime juice. Adjust seasonings to taste.
  2. Let the sauce sit while you cook the chicken for better flavor.

Prepare the Chicken

  1. Pat the chicken thighs dry with paper towels to promote browning.
  2. Season both sides with salt, black pepper, garlic powder, and paprika.
  3. Sprinkle cornstarch lightly over each piece of chicken and rub it in.

Cook the Chicken

  1. Heat a large skillet over medium to medium-high heat and add a thin layer of oil.
  2. When the oil is shimmery, add the chicken thighs in a single layer and cook for about 5 to 7 minutes on the first side.
  3. Flip the chicken and cook another 5 to 7 minutes or until fully cooked and golden brown.
  4. Remove the chicken from the skillet and let it rest for a couple of minutes.

Coat Chicken with Sauce

  1. Slice the chicken into strips and toss it in a bowl with just enough sauce to coat.
  2. Drizzle more sauce on top when serving for added creaminess.

Notes

Serve with rice and some crunchy veggie sides. Leftover chicken can be stored separately from the sauce in the fridge for up to 3-4 days.
