Preparation
- Preheat your oven to 425°F (220°C).
- Wash and trim the zucchini, then slice them into sticks or thick coins.
- Pat the sliced zucchini dry with a paper towel to remove excess moisture.
Cooking
- Line a sheet pan with parchment paper.
- In a bowl, toss the zucchini with olive oil, garlic powder, Italian seasoning, salt, pepper, and Parmesan until evenly coated.
- Spread the zucchini in a single layer on the prepared sheet pan.
- Bake for 18 to 22 minutes, flipping once halfway through. Broil for 1 to 2 minutes at the end if extra browning is desired.
Notes
For extra crispiness, ensure zucchini is dried properly and avoid overcrowding on the pan. Let the zucchini rest for a few minutes after baking to help the coating set.
