Crispy Baked Cauliflower Steaks are a simple yet elegant main dish that brings out the best of cauliflower with its golden-brown edges and tender center, making even picky eaters excited about vegetables.

Main Ingredients

  • 1 large head large head of cauliflower (or 2 medium) (Choose a cauliflower that feels heavy for its size.)
  • 3-4 tablespoons olive oil (or avocado oil) (Use enough oil for browning.)
  • 1 teaspoon garlic powder (Base seasoning for flavor.)
  • 1 teaspoon smoked paprika (Regular paprika works too.)
  • 1 teaspoon salt (Plus more to taste.)
  • 1/2 teaspoon black pepper
  • 2 tablespoons grated Parmesan or nutritional yeast (optional) (Add during the last 10 minutes of baking.)
  • lemon wedges and chopped parsley for serving (optional)

Instructions

Preparation

  1. Preheat your oven to 450°F (230°C).
  2. Line a sheet pan with parchment paper or foil, lightly oiled if using foil.
  3. Trim off the leaves of the cauliflower, keeping the core intact.
  4. Cut the cauliflower in half from top to bottom through the core.
  5. Slice each half into 1-2 inch thick slabs to form ‘steaks’.

Seasoning

  1. In a small bowl, mix olive oil, garlic powder, smoked paprika, salt, and black pepper.
  2. Brush the first side of the steaks with the seasoned oil, then flip and brush the second side.

Baking

  1. Place the steaks on the sheet pan with space around them.
  2. Bake for 15 minutes, then gently flip and bake for an additional 12 to 18 minutes until browned and crispy.
  3. If using Parmesan, sprinkle it on in the last 10 minutes of baking.
  4. Let the steaks sit for 2 minutes before serving with lemon and herbs or your favorite sauce.

Notes

These steaks are customizable: add chili flakes for spiciness, or marinara for an Italian twist. They can be served with various proteins, grains, and fresh salads.
