Main Ingredients

  • 1 wheel wheel of brie (about 8 ounces) (Choose a firm, whole wheel of brie.)
  • 1 sheet sheet puff pastry (thawed) (Thaw in the fridge if possible.)
  • 2-4 tablespoons Raspberry jam (Adjust according to preferred jamminess.)
  • 1 handful Pecans, chopped (Toast for added flavor if desired.)
  • 1 large egg (for egg wash)
  • a pinch salt (optional) (Enhances sweetness.)
  • 1 drizzle honey (optional) (Adds extra sweetness.)
  • 1 pinch cinnamon (optional) (Gives a cozy flavor.)

Instructions

Preparation

  1. Preheat your oven to 400°F (200°C).
  2. Lay parchment paper on a baking sheet.
  3. Lightly flour your counter and roll out the thawed puff pastry to smooth out seams.
  4. Place the brie wheel in the center of the pastry.
  5. Spoon raspberry jam on top of the brie and sprinkle chopped pecans on top.
  6. Fold the pastry up and over the brie, sealing it tightly to avoid leaks.
  7. Flip the pastry seam side down so the smooth side is up.
  8. Brush the top and sides with beaten egg wash for a golden finish.

Baking

  1. Bake in the preheated oven for 20 to 25 minutes, until the pastry is deeply golden.
  2. If the pastry browns too quickly, lower the temperature to 375°F and continue baking until done.
  3. Let it rest for 10 to 15 minutes before serving to allow the cheese to settle.

Notes

Serve warm with crackers, apples, pears, or prosciutto. Feel free to customize with different jams or nuts.
