Description

A bright and lemony marinade that makes basic chicken taste like you ordered it from a seaside taverna, perfect for grilling, baking, or pan-searing.


Ingredients

For the Marinade

  • 1/4 cup Olive oil (Keeps the chicken juicy)
  • 1/4 cup Fresh lemon juice (Use fresh lemons for the best flavor)
  • 4 cloves Garlic, minced (Adds robust flavor)
  • 1 tablespoon Dried oregano (Classic Greek herb; do not skip)
  • 1 teaspoon Salt (Enhances flavor)
  • 1/2 teaspoon Black pepper (Freshly cracked preferred)
  • 1 teaspoon Honey (Optional, for balance)
  • 1/2 teaspoon Paprika (Optional, for warmth)
  • 1/2 teaspoon Red pepper flakes (Optional, for heat)

For the Chicken

  • 1.5 pounds Chicken thighs or breasts (Thighs are more forgiving for cooking)


Instructions

Preparation

  1. In a bowl or jar, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Taste the marinade; adjust salt or add honey if too sharp.
  3. Put chicken in a bag or container and pour the marinade over it.
  4. Toss to coat and refrigerate for at least 20 minutes or up to 12 hours.

Cooking

  1. Preheat grill, oven, or pan for cooking.
  2. Cook the chicken using your preferred method until fully cooked.
  3. Let the chicken rest for 5 minutes before slicing.

Notes

Store cooked chicken in a sealed container for up to 4 days. Freezing is possible; just ensure it’s in an airtight container.
