Ingredients

Salad Base

  • 2 cups Shredded green cabbage (Use as the base for crunch.)
  • 1 cup Shredded purple cabbage (Optional for color.)
  • 1 cup Shredded carrots (Adds crunch.)
  • 1 cup Sliced bell pepper (Any color you prefer.)
  • 1 cup Cucumber slices (Optional for freshness.)
  • 1 cup Chopped green onions (For flavor.)
  • 1/4 cup Chopped cilantro (Optional if you love it.)
  • 2 cups Cooked chicken (Can be grilled, baked, or rotisserie.)
  • 1/2 cup Roasted peanuts (For topping.)
  • 2 tbsp Sesame seeds (Optional topping.)
  • 1 cup Crunch add-ons (wonton strips or crispy rice noodles) (Optional for extra crunch.)

Peanut Dressing

  • 1/2 cup Peanut butter (Creamy or chunky.)
  • 1/4 cup Soy sauce or tamari (For flavor.)
  • 2 tbsp Lime juice or rice vinegar (For acidity.)
  • 1 tbsp Honey or maple syrup (For sweetness.)
  • 1 tbsp Sesame oil (Strong flavor, use sparingly.)
  • 1 clove Garlic, minced (For flavor.)
  • 1 tsp Ginger, grated (Fresh or ground.)
  • 1/4 cup Warm water (To thin the dressing.)

Instructions

Preparation

  1. Chop and shred your vegetables.
  2. Prep your chicken by slicing, shredding, or cubing.

Making the Dressing

  1. Mix peanut butter, soy sauce, lime juice, honey, sesame oil, garlic, ginger, and warm water in a bowl or jar.
  2. Taste and adjust seasoning as needed.

Assembly
