Description

A fresh, healthy, and satisfying salad featuring peppery arugula and crispy roasted chickpeas, dressed in a bright lemon honey dressing.


Ingredients

  • 1 can Chickpeas, canned (Drain and rinse before use.)

  • 1/2 small Red onion, thinly sliced (Adjust amount to taste.)
  • 1/2 cup Parmesan or feta cheese, shaved or crumbled (For a salty finish.)

Dressing

  • 1/4 cup Olive oil (Extra virgin for better flavor.)
  • 2 tablespoons Lemon juice (Freshly squeezed is ideal.)
  • 1 teaspoon Honey (Can be swapped with maple syrup.)
  • 1/2 teaspoon Dijon mustard (Optional, for creaminess.)
  • 1 clove Garlic, minced (Or a pinch of garlic powder.)
  • to taste Salt and black pepper (Adjust according to taste.)

Crispy Chickpeas

  • 1 tablespoon Olive oil (For roasting.)
  • to taste Salt, pepper, and spices (Such as paprika, cumin, or chili flakes.)

Instructions

Crispy Roasted Chickpeas

  1. Preheat the oven to 425°F (220°C).
  2. Drain and rinse the chickpeas, then dry them well with a kitchen towel.
  3. Toss the chickpeas with olive oil, salt, pepper, and any spices you prefer.
  4. Spread them out on a baking sheet and roast for 20-30 minutes, shaking the pan occasionally.
  5. Remove from oven and let cool to retain crunch.

Prepare Lemon Honey Dressing

  1. In a bowl or jar, whisk together olive oil, lemon juice, honey, Dijon, minced garlic, salt, and pepper.
  2. Taste and adjust the seasoning, adding more honey or lemon as needed.

Assemble Salad

  1. In a large bowl, combine arugula, cucumber, tomatoes, and red onion.
  2. Drizzle the lemon honey dressing over the salad and toss gently.
  3. Top with crispy roasted chickpeas and cheese before serving.
