For the crust
- 1.5 cups Graham cracker crumbs (Crushed into fine crumbs)
- 3 tbsp Granulated sugar (For sweetness)
- 0.5 cups Unsalted butter (Melted)

For the filling
- 16 oz Cream cheese (Full fat, softened to room temperature)
- 1 cup Granulated sugar (Regular sugar)
- 0.5 cups Sour cream (Or Greek yogurt for tang)
- 3 large Eggs (Room temperature for easier mixing)
- 1 tbsp Vanilla extract (For flavor)
- 0.75 cups Reduced apple cider syrup (Reduced to a thick texture)
- 1 pinch Salt (Balances the sweetness)
Instructions
Prepare the crust
- Preheat oven to 325°F (163°C).
- Mix graham cracker crumbs, sugar, salt, and melted butter until it resembles wet sand.
- Press the mixture into the bottom and slightly up the sides of a springform pan.
- Bake for about 10 minutes and let cool.
Make the reduced apple cider syrup
- Pour apple cider into a wide pot and bring to a simmer.
- Simmer until reduced to a dark syrupy consistency, about 3/4 cup total.
- Let cool before adding to the filling.
Prepare the filling
- In a large bowl, beat cream cheese and sugar until smooth.
- Add sour cream and vanilla, mixing until combined.
- Gradually drizzle in the cooled reduced cider syrup and mix again.
- Add eggs one at a time, mixing just until incorporated, avoiding excess air.
Bake the cheesecake
- Wrap the outside of the springform pan in heavy-duty foil and place it in a larger roasting pan.
- Pour hot water into the roasting pan until it reaches halfway up the springform.
- Bake at 325°F for 60-75 minutes, checking at 1 hour. The center should jiggle slightly.
- Turn off the oven and let the cheesecake sit in the oven with the door cracked for about 45 minutes.
Cool and chill
- Remove cheesecake from water bath and let cool on the counter.
- Cover and refrigerate for at least 6 hours, preferably overnight.
Notes
For best results, allow cheesecake to chill overnight. Ideal toppings include whipped cream, caramel sauce, or sautéed apples.
