- 1 lb Boneless skinless chicken thighs or breasts
- 2 medium Apples, sliced (Good options: Honeycrisp, Granny Smith, or Pink Lady)
- 1 small Onion, sliced
- 2-3 cloves Garlic, minced
- 0.5 cup Apple cider (For sauce)
- 1 tbsp Dijon mustard (For bold flavor)
- 0.5 cup Heavy cream (For creaminess)
- 0.5 cup Chicken broth (Optional, to loosen sauce if needed)
- 2 tbsp Butter or olive oil (For browning the chicken)
- to taste Salt and pepper (Measure the salt lightly at first as it concentrates)
- 1-2 tbsp Optional herbs (thyme or sage) (Great for flavor)

Preparation
- Season the chicken well with salt and pepper.
- Heat butter or oil in a large skillet over medium-high heat.
- Add chicken and cook until golden, then flip and cook until almost done, then remove to a plate.
Cooking
- In the same skillet, add more butter if needed and toss in onions and apples.
- Cook until onions soften and apples start browning, then add garlic for the last minute.
- Return chicken to skillet, add sauce ingredients, and let simmer until the chicken is fully cooked.
- For the sauce: Pour in apple cider and scrape brown bits from the bottom, stir in mustard, let it bubble, then add cream and simmer until thick.
- If the sauce gets too thick, splash in a bit of broth; adjust seasoning if necessary.
Notes
Great served with mashed potatoes or crusty bread. Can be made ahead and reheats well. Store in an airtight container for up to 4 days.
