Ingredients

Units Scale

Main ingredients

  • 1 lb Boneless skinless chicken thighs or breasts
  • 2 medium Apples, sliced (Good options: Honeycrisp, Granny Smith, or Pink Lady)
  • 1 small Onion, sliced
  • 2-3 cloves Garlic, minced
  • 0.5 cup Apple cider (For sauce)
  • 1 tbsp Dijon mustard (For bold flavor)
  • 0.5 cup Heavy cream (For creaminess)
  • 0.5 cup Chicken broth (Optional, to loosen sauce if needed)
  • 2 tbsp Butter or olive oil (For browning the chicken)
  • to taste Salt and pepper (Measure the salt lightly at first as it concentrates)
  • 1-2 tbsp Optional herbs (thyme or sage) (Great for flavor)

Instructions

Preparation

  1. Season the chicken well with salt and pepper.
  2. Heat butter or oil in a large skillet over medium-high heat.
  3. Add chicken and cook until golden, then flip and cook until almost done, then remove to a plate.

Cooking

  1. In the same skillet, add more butter if needed and toss in onions and apples.
  2. Cook until onions soften and apples start browning, then add garlic for the last minute.
  3. Return chicken to skillet, add sauce ingredients, and let simmer until the chicken is fully cooked.
  4. For the sauce: Pour in apple cider and scrape brown bits from the bottom, stir in mustard, let it bubble, then add cream and simmer until thick.
  5. If the sauce gets too thick, splash in a bit of broth; adjust seasoning if necessary.

Notes

Great served with mashed potatoes or crusty bread. Can be made ahead and reheats well. Store in an airtight container for up to 4 days.
