Instructions

Preparation

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line it with parchment paper for easy removal.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together eggs and granulated sugar. Add oil (or melted butter), yogurt or sour cream, and optional vanilla. Mix until combined.
  4. Fold the dry ingredients into the wet mixture until no dry flour remains. Do not overmix. Gently fold in diced apples.

Assembly and Baking

  1. Pour half the batter into the prepared loaf pan. Sprinkle a layer of the cinnamon sugar swirl mix over it.
  2. Add the remaining batter, then top with the rest of the swirl mix. Use a butter knife to swirl gently without overmixing.
  3. Bake for 50 to 65 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  4. Cool in the pan for 15 minutes, then lift out and cool completely before slicing.

Notes

Let the bread cool before slicing to avoid excess moisture loss. It tastes better the next day.
