Ingredients
Main Ingredients
- 2 cups apples, peeled and chopped small (Use honeycrisp, granny smith, or pink lady apples.)
- 2 cups all-purpose flour (Spoon and level it for best results.)
- 1 cup granulated sugar (For sweetness and texture.)
- 1/2 cup brown sugar (Mixed with cinnamon for the swirl.)
- 2 teaspoons ground cinnamon (Adds cozy flavor.)
- 1 teaspoon baking powder (For lift.)
- 1/2 teaspoon salt (Enhances flavors.)
- 2 eggs (Provides structure.)
- 1/2 cup milk (Keeps batter smooth.)
- 1 teaspoon vanilla extract (Optional but recommended.)
- 1/4 cup butter or neutral oil, melted (Butter adds flavor, oil keeps it moist.)
- 1 cup powdered sugar (For the glaze.)
- 1-2 tablespoons milk (For the glaze consistency.)
Instructions
Preparation
- Preheat your oven to 350 F (175 C). Grease a loaf pan and line with parchment if desired.
- Mix chopped apples with a little sugar and cinnamon in a bowl. Set aside to allow juices to develop.
- In a separate bowl, whisk together flour, baking powder, and salt.
- In a larger bowl, whisk eggs, granulated sugar, milk, melted butter (or oil), and vanilla until smooth.
- Stir the dry ingredients into the wet ingredients until just combined. Do not overmix.
- In a small bowl, mix brown sugar and cinnamon for the swirl.
Assembly
- Pour half of the batter into the prepared pan. Sprinkle some of the cinnamon sugar mixture on top and add a layer of the chopped apples.
- Add the remaining batter, then top with the rest of the cinnamon sugar and a few more apple pieces. Gently swirl with a butter knife.
Baking
- Bake in the preheated oven for 50 to 60 minutes, until golden and a toothpick inserted comes out clean. Tent with foil if browning too quickly.
- Cool in the pan for 10 to 15 minutes, then lift out and cool completely before glazing.
Glazing
- Whisk powdered sugar with a splash of milk until it drizzles smoothly. Drizzle over the cooled loaf.
Notes
For best results, do not overmix the batter and use small apple chunks. Cool the bread before glazing for better retention of the glaze.
