Ingredients
Zucchini
- 2 medium medium zucchini (Cut into sticks, rounds, or spears.)
Coating
- 1-2 tablespoons olive oil (or avocado oil) (Light coating ensures crispiness.)
- 1/3 cup grated Parmesan (Fine grated sticks best.)
- 1/2 cup panko breadcrumbs (Can use regular breadcrumbs.)
- 1 teaspoon garlic powder (Adjust to taste.)
- 1/2 teaspoon salt (Adjust to taste.)
- 1/2 teaspoon black pepper
- pinch paprika or red pepper flakes (Optional for added spice.)
Dipping Sauce (optional)
- 1 marinara, ranch, or yogurt dip (Choose based on preference.)
Instructions
Preparation
- Preheat the air fryer to 400°F for a few minutes.
- Cut the zucchini into preferred shapes: sticks, rounds, or spears. Pat dry with paper towels.
Coating
- In a bowl, toss zucchini with oil.
- In another bowl, mix Parmesan, panko, garlic powder, salt, pepper, and any extra spices.
- Press the zucchini pieces into the coating mix to ensure it sticks.
Cooking
- Arrange the zucchini in a single layer in the air fryer basket, ensuring not to stack.
- Cook for 8 to 12 minutes total, flipping or shaking halfway through.
Serving
- Serve immediately for peak crunch, optionally sprinkling additional Parmesan on top.
Notes
Store leftovers in an airtight container with a paper towel to absorb moisture. Best consumed fresh. For reheating, air fry at 375°F for 3-5 minutes.
