A quick and easy recipe for making crispy air fryer eggplant that’s perfect as a snack, side dish, or salad topper, without the need for deep frying.


Ingredients

Main Ingredients

  • 1 medium eggplant (Choose firm, shiny eggplant.)
  • 1 large egg, beaten (Can substitute with 3 tbsp milk.)
  • 1/2 cup breadcrumbs (Panko for extra crunch.)
  • 2-3 tbsp grated parmesan (Optional, can be omitted.)
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt (Plus more to taste.)
  • 1 dash black pepper
  • as needed spray olive oil spray or avocado oil spray

Optional Additions

  • to taste chili flakes (For heat.)
  • to taste Italian seasoning (For a herby flavor.)


Instructions

Preparation

  1. Preheat your air fryer to 390°F if your model preheats.
  2. Slice the eggplant into 1/2 inch rounds or sticks and pat dry.
  3. Set up two bowls; one with the beaten egg and another with breadcrumbs, parmesan, garlic powder, paprika, salt, and pepper mixed together.

Coating and Cooking

  1. Dip eggplant slices into the egg, then press into the breadcrumb mixture to coat.
  2. Lightly spray both sides with oil spray.
  3. Place in the air fryer basket in a single layer and cook for 10 to 12 minutes, flipping halfway through.
  4. For extra crunch, add an extra minute or two of cooking time.

Serving

  1. Taste and season with additional salt if needed. Serve immediately for the best crunch.

Notes

Keep slices even for uniform cooking and do not overcrowd the air fryer. Use oil spray for optimal browning and crispiness.
