Ingredients
Main Ingredients
- 1 cup Unsalted butter, softened to room temp
- 3/4 cup Brown sugar (Packed)
- 3/4 cup Granulated sugar
- 2 large Large eggs (Room temp if possible)
- 2 teaspoons Vanilla extract
- 2.5 cups All-purpose flour
- 1 teaspoon Cornstarch (For softness)
- 1 teaspoon Baking soda
- 1/4 teaspoon Baking powder (A pinch)
- 1/2 teaspoon Fine sea salt
- 1 teaspoon Cinnamon (Holiday spice)
- 1/4 teaspoon Nutmeg (Just a whisper)
- 2 cups Semi-sweet chocolate chips or chunks
Optional Ingredients
- 1 cup Toasted pecans, crushed peppermint, or dried cranberries (Mix-ins)
- to taste Flaky sea salt (For topping)
Instructions
Preparation
- Pull your butter and eggs out first to reach room temperature.
- Measure your flour by fluffing it, spooning it into the cup, and leveling with a knife.
- Line two baking sheets with parchment and clear space in your fridge to chill the dough.
Mixing the Dough
- Cream the butter and sugars on medium speed until light and fluffy, about 2 to 3 minutes.
- Scrape the bowl. Add eggs one at a time and beat until just combined. Mix in the vanilla.
- Whisk flour, cornstarch, baking soda, baking powder, salt, and spices together.
- Add dry ingredients to the butter mixture on low speed. Mix until just combined and do not overmix.
- Fold in chocolate chips and any add-ins by hand.
Chilling Dough
- Cover the bowl and chill at least 30 minutes. Overnight is best if you can wait.
Baking
- Preheat the oven to 350°F (175°C).
- Scoop the dough and place on parchment-lined pans, leaving generous space between each dough ball.
- Bake for 9 to 12 minutes depending on size, until edges are set and lightly brown; centers should look soft.
Finishing Touches
- While warm, tap extra chips on top if desired. Sprinkle with flaky salt.
- Cool on the pan for 5 minutes, then transfer to a cooling rack.
Notes
Store cookies in an airtight container for 3 to 4 days at room temperature. Freeze baked cookies up to 2 months and thaw at room temp.
