Instructions
Preparation
- Preheat the oven to 400°F (200°C).
- Peel (or leave the skin on) and chop sweet potatoes into bite-sized chunks.
- In a large bowl, toss sweet potatoes with olive oil, maple syrup, cinnamon, and sea salt.
- Spread the sweet potatoes on a big sheet pan, ensuring they’re not overcrowded.
Roasting
- Roast sweet potatoes in the preheated oven for 20 minutes.
- After 10 minutes of roasting, add chopped walnuts to the pan and toss to combine.
- Continue roasting until sweet potatoes are golden and sticky.
Notes
For extra flavor, warm additional maple syrup with more cinnamon and drizzle over the hot potatoes before serving. You can also add a splash of bourbon for variation. Store leftovers in a tight container in the fridge for up to three days.
