Description

A cozy and flavorful casserole featuring sweet onions baked under a golden cap of cheese and butter, perfect for family dinners or potlucks.

Ingredients

Main Ingredients

  • 3 large Sweet onions (Use Vidalia or Walla Walla for best results.)
  • 4 tablespoons Butter (Melted.)
  • 2 cups Cheese blend (Mix of sharp cheddar and mozzarella.)

Seasonings

  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 pinch Paprika (Optional for warmth.)

Instructions

Preparation

  1. Preheat your oven to 375°F and grease a 9×13 baking dish.
  2. Peel the sweet onions, trim the ends, and slice them into 1/4 inch rings.
  3. Separate the onion rings and pat them dry with a clean towel to reduce moisture.

Layering

  1. Arrange the onion rings in the dish using a shingled pattern with slightly overlapping slices.
  2. Drizzle melted butter over the onions.
  3. Sprinkle with salt, pepper, garlic powder, and optional paprika.
  4. Spread the shredded cheese blend evenly over the top.

Baking

  1. Cover the casserole with foil and bake for 20 minutes.
  2. Remove the foil and continue to bake for another 15 to 20 minutes until the onions are fork tender and the cheese is bubbly and golden.
  3. Broil for 1 minute if you want extra browning, keeping a close watch.
  4. Let it rest for 5 to 10 minutes before serving to allow the layers to settle.

Notes

For variations, consider adding smoked paprika, herbs, or even diced meat. Can be made ahead and stored in the fridge or frozen after baking.
