- 2 tablespoons Canola oil (Used for warming tortillas.)
- 8 pieces Corn tortillas (6 inch), soft (Warm before filling.)
- 0.5 cup Monterey jack cheese (Grated cheese for topping.)
Instructions
Preparation
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the turkey bacon until crispy, then chop into pieces.
- Boil or steam the potatoes until tender, then mash them lightly.
- In a bowl, whisk the eggs and mix in the taco seasoning.
- Pour the egg mixture into the skillet and scramble until just set.
- In a separate pan, warm the corn tortillas.
Assembly
- Fill each tortilla with a layer of mashed potatoes, scrambled eggs, and bacon bits.
- Place the filled tortillas in a baking dish.
- Sprinkle cheese on top.
Baking
- Bake for 15-20 minutes until the cheese is melted and bubbly.
