A hearty and healthy bowl combining sweet potatoes, ground beef, and a kicky hot honey drizzle, perfect for satisfying cravings and meal prep.


Ingredients

Main Ingredients

  • 1 large sweet potato, peeled and diced (or 2 small sweet potatoes)
  • 1 lb ground beef (can be substituted with ground turkey or chicken)
  • 2-3 tablespoons hot honey (store-bought or homemade mix of honey and hot sauce)
  • 1 tablespoon olive oil (for roasting sweet potatoes)
  • 1 tablespoon taco seasoning (store pack or homemade)
  • 1 pinch salt
  • 1 pinch pepper

Optional Toppings

  • green onion
  • avocado
  • feta
  • cilantro
  • sour cream


Instructions

Prepare the Sweet Potatoes

  1. Preheat the oven to 425°F (220°C).
  2. Cube the sweet potatoes to about the size of game dice.
  3. Coat the cubed sweet potatoes in olive oil and sprinkle with salt.
  4. Spread the sweet potatoes on a baking sheet and roast until edges darken and caramelize, taking about 20 minutes.

Cook the Beef

  1. In a large pan, brown the ground beef over medium heat, breaking it apart as it cooks.
  2. If excess grease accumulates, drain some off.
  3. Sprinkle the taco seasoning over the beef, along with a bit of water, and let it simmer until well combined.

Assemble the Bowl

  1. Layer the roasted sweet potatoes at the bottom of each bowl.
  2. Top with the seasoned ground beef.
  3. Drizzle hot honey over the top in a zig-zag pattern.
  4. Add any desired toppings such as avocado, feta, green onions, or cilantro.

Notes

Store cooked sweet potatoes and beef separately in the fridge for up to 4 days. Reheat before assembling for fresh meals. Add toppings right before serving to maintain texture.
