Ingredients

Main Ingredients

  • 1 pound ground beef (85% lean) (Juicy but not greasy.)
  • 2 medium sweet potatoes (Peel and cube for easy cooking.)
  • 1 tablespoon cooking oil (olive oil recommended) (For roasting sweet potatoes.)
  • 1 cup cottage cheese (For creaminess and protein.)
  • 1 medium avocado (Sliced or cubed.)

Seasonings

  • 1 teaspoon smoked paprika (For flavor.)
  • 1 teaspoon garlic powder (For flavor.)
  • 1/2 teaspoon salt (To taste.)
  • 1/2 teaspoon black pepper (To taste.)
  • 1 tablespoon hot honey (Adds sweetness and kick.)

Optional Toppings

  • salsa (For added flavor.)
  • diced tomatoes (For freshness.)
  • chives (For garnish.)
  • feta cheese (For extra flavor.)

Instructions

Preparation

  1. Preheat oven or air fryer to 400°F (200°C).
  2. Peel and cube sweet potatoes. Toss with olive oil, salt, and pepper.

Cooking

  1. Spread sweet potatoes on baking sheet or place in the air fryer and roast or air fry until golden, about 15–30 minutes.
  2. Meanwhile, cook ground beef in a large pan on medium-high heat, breaking into small pieces. Drain excess fat if needed.
  3. Sprinkle seasonings over the beef and cook for another couple of minutes until flavored and slightly charred.

Assembly

  1. Build your bowl: place sweet potatoes at the bottom, followed by beef on top.
  2. Drizzle hot honey over the beef and add a scoop of cottage cheese and slices of avocado.
  3. Add any optional toppings as desired.

Notes

Feel free to prep sweet potatoes ahead for quick assembly during busy nights. Adjust seasonings to your taste and mix up toppings for variety. This recipe is highly customizable depending on what you have in your fridge.
