Ingredients
For the crust
- 1 package sugar cookie dough (tube or homemade)
- 1 tablespoon flour (helps prevent sticking)
For the cheesecake filling
- 3 blocks cream cheese (softened)
- 1 cup sugar
- 3 pieces eggs (room temperature)
- 1/2 cup sour cream (adds creaminess)
- 2 teaspoons vanilla extract

Instructions
Preparation
- Preheat your oven to 325°F (163°C).
- Press the sugar cookie dough into the bottom of a springform pan, creating a crust wall about an inch high.
- Bake the crust for 10 minutes to set the shape.
- In a bowl, beat together cream cheese and sugar until smooth.
- Mix in eggs one at a time, followed by sour cream and vanilla extract.
- Pour the cheesecake filling over the baked crust.
- Bake for 50-60 minutes, until the edges are set but the middle jiggles slightly.
- Chill the cheesecake for at least 4 hours, preferably overnight, before serving.
Notes
To prevent sticking, chill the dough before pressing it into the pan. Use a water bath for even baking and to prevent cracks.
