Balsamic Strawberry Vinaigrette
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1-2 teaspoons honey or maple syrup (Adjust based on taste.)
- 1 teaspoon Dijon mustard
- 1 pinch salt
- 1 pinch pepper
- 2-3 tablespoons mashed strawberries or strawberry jam (For a smoother dressing.)

Preparation
- Add baby spinach to a large salad bowl.
- Slice strawberries and scatter them over the greens.
- Add crumbled feta and nuts, and top with sliced red onion if desired.
- Dress the salad right before serving and toss gently to avoid smashing the berries.
Making the Vinaigrette
- In a jar, add olive oil, balsamic vinegar, honey, Dijon mustard, salt, pepper, and mashed strawberries or jam.
