Instructions
Preparation
- Cut the chicken into even chunks, about 1 to 1.5 inches.
- In a bowl, toss the chicken with a little mayonnaise or oil, seasonings, and a spoon of bang bang sauce. Let marinate for 15 to 30 minutes.
- If using wooden skewers, soak them in water for at least 20 to 30 minutes to prevent burning.
Cooking
- Air Fryer Method: Preheat the air fryer to 400°F. Arrange skewers in a single layer and cook for about 10 minutes, flip, then cook for another 6 to 10 minutes until chicken reaches 165°F. Brush with bang bang sauce in the last 2 minutes.
- Grilling: Preheat grill to medium or medium-high heat. Oil the grates, grill skewers for 4 to 6 minutes per side, brushing with sauce in the last minutes.
- Oven Method: Preheat oven to 425°F. Line a sheet pan with foil and set a rack on top. Bake for 18 to 22 minutes, flipping once and brushing with sauce near the end.
Serving
- Rest skewers for a couple of minutes before serving. Serve with extra bang bang sauce and lime wedges, if desired.
