Ingredients

For the Cookie Dough

  • 1 cup fresh strawberries, chopped (Can use a strawberry reduction for stronger flavor.)
  • 1 cup unsalted butter, softened (For richness.)
  • 1 cup granulated sugar (For sweetness and crisp edges.)
  • 1 large egg (For structure and chew.)
  • 1 teaspoon vanilla extract (To round out the berry flavor.)
  • 2.5 cups all-purpose flour (For the base.)
  • 1 teaspoon baking powder (For lift.)
  • 1/2 teaspoon salt (To enhance flavor.)

For Rolling (Optional)

  • 1/4 cup granulated sugar (For a sparkly top.)


Instructions

Preparation

  1. If using juicy strawberries, chop 1 cup and simmer them in a small pan over medium heat until thick and jammy, about 10 minutes. Let it cool.
  2. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

Mixing and Baking

  1. Cream the butter and sugar until fluffy, about 2 minutes. Add the egg and vanilla and mix again.
  2. Mix in the cooled strawberry reduction or very finely chopped strawberries if they’re not overly juicy.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing just until the flour disappears. Do not overmix.
  4. Chill the dough for 30 minutes.
  5. Scoop dough into balls (about 1.5 tablespoons each) and roll in sugar if desired.
  6. Bake for 9 to 11 minutes until the edges are set but the centers look slightly underdone. They will firm up as they cool.
  7. Cool on the pan for 5 minutes, then move to a wire rack.

Notes

Chill dough to prevent spreading and avoid overbaking for soft, chewy cookies. Store in an airtight container for 3-4 days to maintain softness.
