Ingredients
For the Soup
- 1 lb Italian sausage (Mild or spicy, depending on your preference.)
- 5 cups chicken broth (Low-sodium for better control of seasoning.)
- 4 medium russet or gold potatoes (Sliced into half moons.)
- 1 medium onion (Diced.)
- 4 cloves garlic (Minced.)
- 2 cups kale or spinach (Chopped, add kale for traditional taste.)
- 1 cup heavy cream (Add at the end for creamy texture.)
- 1 teaspoon crushed red pepper (Optional, depending on heat preference.)

Instructions
Preparation
- Heat a skillet over medium heat. Add the Italian sausage, breaking it into crumbles.
- Cook until browned with no pink remaining. Drain excess fat if needed.
- Transfer the browned sausage to the slow cooker.
Cooking
- Add sliced potatoes, diced onion, minced garlic, and chicken broth to the slow cooker.
- Cover and cook on Low for 5 to 6 hours, or on High for 3 to 4 hours, until potatoes are tender.
Finishing Touch
- Stir in chopped kale or spinach and cook for 10 to 15 minutes, until wilted.
- Stir in heavy cream. Adjust salt, pepper, and heat to taste.
- Ladle into bowls and top with grated Parmesan cheese if desired.
Notes
For added flavor, brown the sausage the night before and refrigerate. Substitute dairy cream with coconut milk for a dairy-free option.
