- 2-3 pounds Beef (Sirloin or chuck roast, trimmed and cut into 1-inch cubes) (Choose sirloin for tenderness or chuck roast for a fall-apart texture.)
- 1/2 cup Butter (Salted or unsalted)
- 4 cloves Garlic (minced) (Fresh minced garlic is best for bold flavor.)
- 1 cup Beef broth (A small splash to keep things moist.)
- 2 tablespoons Worcestershire sauce (Adds savory depth.)
- 1 teaspoon Salt (Start light, adjust to taste.)
- 1 teaspoon Black pepper (Start light, adjust to taste.)
- 1 teaspoon Onion powder
- 1 teaspoon Paprika
- 1/4 cup Fresh herbs (Parsley or thyme) (For finishing.)
Optional Add-ins
- 1 cup Mushrooms (Add for extra flavor.)

Instructions
Preparation
- Trim any large pockets of fat or silver skin from the beef cubes.
- Pat the cubes dry to help them brown better if searing.
- Season the beef generously with salt, pepper, onion powder, and paprika.
Cooking
- Whisk melted butter, minced garlic, beef broth, and Worcestershire sauce together. Taste and lightly season.
- Pour half of the garlic butter over the beef in the slow cooker.
- Cook on Low for about 3 to 4 hours, starting to check for tenderness at 2.5 hours.
- Stir in the remaining garlic butter toward the end for a fresh, glossy finish.
- Add chopped parsley or thyme and a squeeze of lemon if preferred.
Thickening Sauce
- For a thicker sauce, mix 1 tablespoon cornstarch with 1 tablespoon cold water and stir into the slow cooker, cooking 10 to 15 minutes.
- Alternatively, pour the liquid into a saucepan and simmer until it coats the spoon.
- Off heat, swirl in a tablespoon of cold butter to make it silky.
Notes
Salt the beef right before cooking to keep moisture. Let the beef rest for 5 minutes before serving. Store leftovers in an airtight container with sauce for up to 3 days.
