Description

A cozy, open-faced roast beef sandwich topped with mashed potatoes and smothered in rich brown gravy, perfect for long days and effortless dinners.


Ingredients

Main Ingredients

  • 3 to 4 pounds beef roast, ideally chuck (Best choice for tender meat.)
  • 1 to 1.5 cups low sodium beef broth (Helps keep the meat moist.)
  • 1 packet brown gravy mix or au jus mix (For rich flavor.)
  • 1 packet onion soup mix (Alternatively, use 1 tablespoon dried minced onion.)
  • 1 tablespoon Worcestershire sauce (Adds umami flavor.)
  • 2 cloves garlic, minced (Or substitute with 1 teaspoon garlic powder.)
  • 1 teaspoon dried thyme or Italian seasoning (Adds warmth.)
  • 1 teaspoon black pepper (For seasoning.)
  • 1 tablespoon butter (Optional for richness.)
  • 1 onion sliced (Optional ingredient.)
  • 8 ounces mushrooms, sliced (Optional for added flavor.)
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (For thickening the gravy.)
  • Bread for serving like Texas toast or thick white sandwich bread (Sturdy bread that holds the gravy well.)
  • Mashed potatoes for topping (To crown the dish.)


Instructions

Preparation

  1. Season the roast all over with pepper and a light sprinkle of salt.
  2. Place onion and mushrooms in the bottom of the slow cooker if using.
  3. Set the roast on top, fat side up.
  4. Whisk together broth with gravy mix, onion soup mix, Worcestershire sauce, garlic, and thyme.
  5. Pour this mixture around the roast.
  6. Dot the top of the roast with butter, if using.

Cooking

  1. Cook on low for about 8 to 10 hours, or on high for 4 to 6 hours, until the beef shreds easily with two forks.
  2. Transfer the roast to a board and shred.
  3. Skim excess fat from the cooking liquid.
  4. If the gravy looks thin, stir in cornstarch slurry and let it bubble on high for 10 to 15 minutes.
  5. Put the shredded beef back into the gravy.

Serving

  1. Toast or warm your bread.
  2. Spoon on a generous layer of beef and gravy, then top with mashed potatoes, adding more gravy on top.

Notes

Cook low and slow whenever possible for best results. Taste and adjust seasoning to preference. This recipe can be made ahead and stored for up to 3 days, or frozen for 3 months.
