- 1 1/2 cups all-purpose flour (Can substitute with a gluten-free blend.)
- 1 extra banana (for topping) (Optional, slice lengthwise for decoration.)

Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, mash the overripe bananas. Leave some lumps for texture.
- Mix in oil (or melted vegan butter), sugar, vanilla, and plant milk until combined.
- Add baking soda and salt, stir again.
- Fold in the flour gently until no dry flour remains. Do not overmix.
- Pour the batter into a lined loaf pan. Optionally, slice an extra banana and lay it on top for a decoration.
Cooking
- Bake for 50 to 60 minutes, checking at 50 minutes. A toothpick should come out mostly clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack.
