Ingredients

For the vinaigrette

  • 1 piece Ripe peach, chopped (Fresh, peeled if skin bothers you)
  • 1 tablespoon Dijon mustard (For tang and emulsification)
  • 1-2 tablespoons Honey (Start small, adjust to taste)
  • 2 tablespoons Balsamic vinegar (Use a rich variety)
  • 1/4 cup Olive oil (Use one that you like the taste of)
  • to taste Salt and black pepper (Adds balance to flavors)
  • 1 clove Garlic (optional) (For added depth)
  • 1 pinch Red pepper flakes (optional) (For a spicy kick)


Instructions

Preparation

  1. Add chopped peach to a blender.
  2. Add Dijon mustard, honey, and balsamic vinegar.
  3. Add a pinch of salt and a few grinds of black pepper.
  4. Blend until smooth.
  5. With the blender running, slowly drizzle in olive oil until creamy.
  6. Taste and adjust sweetness with more honey, tang with more balsamic, or add salt if needed.

Notes

Store in a jar with a tight lid in the fridge. Best within 3-4 days. If it thickens, let it sit at room temperature and shake before using.
