Ingredients
For the Cheesecake Topping
- 8 oz Cream cheese, softened (Let it sit at room temperature to soften.)
- 1 cup Heavy whipping cream or Greek yogurt (Use whipped cream for a fluffier texture.)
- 1/4 cup Honey, maple syrup, or powdered sugar (Choose your preferred sweetener.)
- 1 tsp Vanilla extract
- 1 pinch Salt (Even for sweet recipes.)
For the Watermelon Pizza
- 1 large Watermelon (Sliced into 1 inch thick rounds.)
- 1 cup Fruit toppings (e.g., strawberries, blueberries, kiwi, mandarin oranges) (Use a variety for color and flavor.)
- 1/4 cup Graham cracker crumbs (Optional for topping.)
- 1 tbsp Butter, melted (Optional for crust if making bites.)
- 1 tbsp Lime zest (Optional for flavor enhancement.)
- 1 tbsp Chopped mint (Optional for garnish.)
Instructions
Prepare the Cheesecake Topping
- Soften the cream cheese for about 30 minutes at room temperature.
- Whip the heavy cream until soft peaks form.
- In another bowl, mix cream cheese with sweetener, vanilla, and salt until smooth.
- Fold the whipped cream into the cream cheese mixture gently.
- If making bites, mix graham cracker crumbs with melted butter and press into mini muffin liners.
- Chill the cheesecake topping for at least 1–2 hours.
Assemble the Watermelon Pizza
- Slice the watermelon into thick rounds, about 1 inch thick.
- Pat the tops dry with paper towels.
- Spread the cheesecake topping on top of each watermelon round.
- Add fruit toppings in sections like pizza toppings.
- Slice into wedges and serve immediately.
