Preparation
- Pat sauerkraut dry to prevent sogginess.
- Lay out a slice of corned beef, top with a slice of Swiss, then a small strip of sauerkraut.
- Sprinkle a few caraway seeds, then roll tightly.
- Optionally, wrap with a half tortilla or egg wrap for added structure.
Cooking
- Heat a nonstick pan over medium with a thin layer of avocado oil or ghee.
- Place roll-ups seam-side down in the pan and let them sit untouched until the cheese lightly browns and seals the seam.
