Ingredients

  • 8 oz Corned beef or pastrami, sliced thin (Look for 0 to 1 gram carbs per serving.)
  • 8 oz Swiss cheese or provolone (Swiss gives that classic Reuben vibe.)
  • 1 cup Sauerkraut, rinsed and squeezed dry (Helps them stay crisp.)
  • 4 pieces Low-carb tortillas or egg wraps (Optional for extra structure.)
  • 1 tbsp Avocado oil or ghee (For crisping in the pan.)
  • 1/4 cup Thousand Island style sauce (Made lighter with mayo, Greek yogurt, and pickle juice.)
  • 1 tsp Caraway seeds (Brings that rye flavor without the bread.)
  • 2 tbsp Coarse mustard (For dipping or spreading.)


Instructions

Preparation

  1. Pat sauerkraut dry to prevent sogginess.
  2. Lay out a slice of corned beef, top with a slice of Swiss, then a small strip of sauerkraut.
  3. Sprinkle a few caraway seeds, then roll tightly.
  4. Optionally, wrap with a half tortilla or egg wrap for added structure.

Cooking

  1. Heat a nonstick pan over medium with a thin layer of avocado oil or ghee.
  2. Place roll-ups seam-side down in the pan and let them sit untouched until the cheese lightly browns and seals the seam.
  3. Rotate gently to crisp all sides until golden brown.
  4. Serve with a dollop of thousand island style sauce or coarse mustard.
