- 1 cup tapioca pearls (Use regular store tapioca.)
- 4 cups water (For cooking tapioca.)
- 1 can coconut milk (Use good quality canned coconut milk.)
- 1/2 cup sugar (Adjust to taste.)
- 1/4 teaspoon salt
- Fresh fruits (mango, berries, etc.) for topping (Choose seasonal fruits.)
- Mint leaves for garnish (optional) (Add a fresh touch.)
Instructions
Cooking the Tapioca
- In a pot, bring 4 cups of water to a boil.
- Add the tapioca pearls and cook according to package instructions, usually about 15-20 minutes, stirring occasionally.
- Once cooked, drain the tapioca pearls and rinse under cold water to stop the cooking process.
Preparing the Coconut Mixture
- In a separate saucepan, combine the coconut milk, sugar, and salt. Heat over medium until the sugar dissolves; do not let it boil.
- Add the cooked tapioca pearls to the coconut mixture and stir gently to combine.
Chilling
- Allow the mixture to cool to room temperature, then chill in the refrigerator for at least one hour.
Serving
- Scoop the chilled tapioca dessert into bowls and top with fresh fruits and optional mint leaves.
Notes
Store leftovers in an airtight container in the refrigerator for 2-3 days. Serve fresh fruit separately to prevent sogginess.
