- 10.5 ounces cream of chicken soup
- 8 ounces cream cheese, cubed and softened (For creaminess.)
- 1 cup low-sodium chicken broth (Helps create the sauce.)
- 1.5 to 2 pounds baby potatoes, halved if large (Classic base for the meal.)
- 2 to 3 pieces carrots, sliced thick, optional (For added flavor and texture.)
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 2 tablespoons butter, optional for extra richness

- 2 teaspoons cornstarch plus 2 teaspoons water (Only if you need to thicken.)
Instructions
Preparation
- Spray your slow cooker with cooking spray.
- Scatter the potatoes and carrots on the bottom.
- Mix cream of chicken soup, cubed cream cheese, ranch seasoning, broth, garlic powder, and pepper in a bowl until mostly smooth.
- Place the chicken on top of the veggies and pour the sauce over everything.
- Add butter if using.
Cooking
- Cook on LOW for 5 to 6 hours or HIGH for 2.5 to 3.5 hours.
- Check that the chicken is tender and easy to shred.
- Avoid lifting the lid frequently to retain heat.
Finishing
- Shred or slice the chicken in the pot and stir into the creamy ranch gravy.
- If the sauce is too thin, mix a quick cornstarch slurry and stir it in.
- Let it cook a bit longer to thicken.
- Taste and adjust salt and pepper at the end.
