Description

This creamy ranch chicken cooked in a slow cooker is an easy, comforting weeknight meal featuring tender chicken, silky ranch gravy, and soft potatoes.


Ingredients

Main Ingredients

  • 2 to 2.5 pounds chicken, breasts or thighs (Pick based on preference; breasts are leaner, thighs are richer.)
  • 1 packet ranch seasoning mix, or 3 tablespoons homemade (Store-bought or homemade options available.)
  • 10.5 ounces cream of chicken soup
  • 8 ounces cream cheese, cubed and softened (For creaminess.)
  • 1 cup low-sodium chicken broth (Helps create the sauce.)
  • 1.5 to 2 pounds baby potatoes, halved if large (Classic base for the meal.)
  • 2 to 3 pieces carrots, sliced thick, optional (For added flavor and texture.)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter, optional for extra richness
  • to taste servings fresh parsley or chives for garnish (Adds freshness.)
  • 2 teaspoons cornstarch plus 2 teaspoons water (Only if you need to thicken.)


Instructions

Preparation

  1. Spray your slow cooker with cooking spray.
  2. Scatter the potatoes and carrots on the bottom.
  3. Mix cream of chicken soup, cubed cream cheese, ranch seasoning, broth, garlic powder, and pepper in a bowl until mostly smooth.
  4. Place the chicken on top of the veggies and pour the sauce over everything.
  5. Add butter if using.

Cooking

  1. Cook on LOW for 5 to 6 hours or HIGH for 2.5 to 3.5 hours.
  2. Check that the chicken is tender and easy to shred.
  3. Avoid lifting the lid frequently to retain heat.

Finishing

  1. Shred or slice the chicken in the pot and stir into the creamy ranch gravy.
  2. If the sauce is too thin, mix a quick cornstarch slurry and stir it in.
  3. Let it cook a bit longer to thicken.
  4. Taste and adjust salt and pepper at the end.
  5. Sprinkle with parsley for a fresh pop before serving.
