Description

This bright and tangy dressing is creamy and perfect for drizzling over salads, grain bowls, or as a dip for veggies. It’s fresh, easy to make, and flavor-packed with lime and cilantro.


Ingredients

Dressing Base

  • 3/4 cup plain Greek yogurt (Use plain, not vanilla. Full fat is creamier, but 2 percent works too.)
  • 1-2 tablespoons fresh lime juice (Bottled lime juice can be used in a pinch.)
  • 1 handful fresh cilantro (Stems are fine.)
  • 1 clove garlic (One small clove is plenty, or use garlic powder for a milder taste.)
  • 1/4 teaspoon salt (This will wake everything up.)
  • 1-2 teaspoons honey or maple syrup (Optional sweetener to balance the lime.)
  • 1-3 tablespoons water or olive oil (Water thins it out; olive oil makes it richer.)


Instructions

Preparation

  1. Add 3/4 cup plain Greek yogurt to a bowl or blender.
  2. Squeeze in the juice of 1 to 2 limes, depending on how tangy you like it.
  3. Add 1 packed handful of cilantro (stems are fine).
  4. Add 1 small garlic clove and 1/4 teaspoon salt.
  5. If you want it slightly balanced, add 1 to 2 teaspoons honey.
  6. Blend or whisk, then thin with 1 to 3 tablespoons water until it pours the way you like.
  7. Taste it and adjust as necessary.

Notes

This dressing keeps well for about 4 to 5 days in the fridge. Stir before each use, as it may separate.
