Preparation
- Add vinegar (or lemon juice) to a small bowl.
- Whisk in Dijon mustard, salt, and pepper.
- Slowly drizzle in oil while whisking until it thickens and blends.
- Taste and adjust with more salt, honey, or vinegar as needed.
Mason Jar Method
- Add vinegar or lemon juice to the jar.
- Add Dijon, salt, pepper, and any sweetener.
- Add oil.
- Close the lid tightly and shake for 15-20 seconds.
Notes
Keep the vinaigrette in a clean jar in the fridge for 7 to 10 days. Shake before use as it may separate. Adjust flavors based on your salad ingredients.
