Description

A creamy, tangy dip that combines the flavors of pumpkin and whipped feta, perfect for fall gatherings and potlucks.


Ingredients

  • 8 oz block of feta cheese in brine (Do not use pre-crumbled feta.)
  • 1 cup canned pumpkin puree (Use canned for best consistency.)
  • 1/2 cup Greek yogurt (For a smooth texture.)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice (Freshly squeezed.)
  • 1 tbsp honey (Adjust to taste.)
  • 1/2 tsp black pepper
  • 1/4 tsp cinnamon (Optional for warmth.)

Optional Toppings

  • 1/4 cup toasted pepitas (pumpkin seeds) (For garnish.)
  • 2 tbsp chopped walnuts (For garnish.)
  • 1 tbsp fresh parsley or thyme (For garnish.)
  • 1 tbsp drizzle of honey (Optional.)
  • 1/4 tsp smoked paprika (Optional.)


Instructions

Preparation

  1. Plop the feta, pumpkin puree, Greek yogurt, and olive oil into a food processor or blender.
  2. Squeeze in the lemon juice, then add honey, black pepper, and cinnamon.
  3. Blend until smooth and creamy, stopping to scrape down the sides as necessary.
  4. Taste and adjust honey or lemon juice if needed.
  5. Scoop the dip into a serving bowl and garnish with optional toppings.

Notes

This dip is best if made a day in advance to let the flavors meld. Store leftovers in a sealed container in the fridge for up to four days.
