- 1 cup canned pumpkin puree (Use canned for best consistency.)
- 1/2 cup Greek yogurt (For a smooth texture.)
- 2 tbsp olive oil
- 1 tbsp lemon juice (Freshly squeezed.)
- 1 tbsp honey (Adjust to taste.)
- 1/2 tsp black pepper
- 1/4 tsp cinnamon (Optional for warmth.)
Optional Toppings
- 1/4 cup toasted pepitas (pumpkin seeds) (For garnish.)
- 2 tbsp chopped walnuts (For garnish.)
- 1 tbsp fresh parsley or thyme (For garnish.)
- 1 tbsp drizzle of honey (Optional.)
- 1/4 tsp smoked paprika (Optional.)
Instructions
Preparation
- Plop the feta, pumpkin puree, Greek yogurt, and olive oil into a food processor or blender.
- Squeeze in the lemon juice, then add honey, black pepper, and cinnamon.
- Blend until smooth and creamy, stopping to scrape down the sides as necessary.
- Taste and adjust honey or lemon juice if needed.
- Scoop the dip into a serving bowl and garnish with optional toppings.
Notes
This dip is best if made a day in advance to let the flavors meld. Store leftovers in a sealed container in the fridge for up to four days.
