Description

This Pimento Cheese Hash Brown Casserole is the ultimate comfort food, combining cheesy goodness with crispy potatoes and a zingy flavor for a dish that impresses at any gathering.

Ingredients

Casserole Base

  • 1 bag Bag of frozen hash browns (thawed) (Thaw to avoid excess water in the casserole.)
  • 2 cups Pimento cheese (store-bought or homemade) (Homemade gives more control over flavor.)
  • 1 cup Sour cream (full-fat) (For a creamy texture.)
  • 2 cups Shredded sharp cheddar (More cheese for richness.)
  • 1 can Cream of chicken soup (Canned is easiest unless making from scratch.)
  • 2 large Eggs (Holds the mixture together.)

Optional Add-Ins

  • 1 cup Diced jalapeños (For added heat.)
  • 1 cup Crumbled bacon (Optional for extra flavor.)
  • 1 cup Cubed ham (Great for a more filling dish.)
  • 1 cup Sautéed onions (Add for additional depth of flavor.)

Instructions

Preparation

  1. Preheat your oven to 350°F (175°C).
  2. Mix hash browns, pimento cheese, sour cream, cheddar, soup, and eggs in a large bowl.
  3. Add any optional ingredients like bacon or jalapeños to the mix.
  4. Transfer the mixture into a greased baking dish.
  5. If desired, top with extra cheese.

Baking

  1. Bake uncovered for about 45 minutes, until bubbly and golden brown on top.
  2. Check at the 40-minute mark to ensure it doesn’t overbake.

Notes

This dish is great for potlucks and can be prepared ahead of time. It can be customized with different cheeses or add-ins to suit your taste.
