- 2 cups fresh spinach (You can use frozen spinach, thawed and drained.)
- 2 tablespoons olive oil (Use a good quality olive oil for better flavor.)
- 2 cloves garlic, minced (Do not overcook the garlic.)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried oregano (Can replace with fresh if available.)
- 1/2 teaspoon red pepper flakes (optional) (Skip if you prefer less heat.)
- 1 whole lemon, juiced (Add more lemon juice to taste.)
- Crusty bread or rice for serving (Use for mopping up juices.)

Preparation
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the drained white beans, salt, pepper, oregano, and red pepper flakes (if using). Stir to combine.
- Cook for about 5 minutes, allowing the beans to warm through.
- Add the fresh spinach and cook until wilted, about 2 minutes.
- Squeeze lemon juice over the dish before serving.
- Serve warm with crusty bread or over rice.
Notes
For a creamier texture, you can smash a few beans against the pan. Store in an airtight container for up to 4 days. For freezing, omit spinach and add when reheating.
