Description

Ingredients

  • 1 can white beans, drained and rinsed (Any variety of white beans can be used.)
  • 2 cups fresh spinach (You can use frozen spinach, thawed and drained.)
  • 2 tablespoons olive oil (Use a good quality olive oil for better flavor.)
  • 2 cloves garlic, minced (Do not overcook the garlic.)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried oregano (Can replace with fresh if available.)
  • 1/2 teaspoon red pepper flakes (optional) (Skip if you prefer less heat.)
  • 1 whole lemon, juiced (Add more lemon juice to taste.)
  • Crusty bread or rice for serving (Use for mopping up juices.)


Instructions

Preparation

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the drained white beans, salt, pepper, oregano, and red pepper flakes (if using). Stir to combine.
  4. Cook for about 5 minutes, allowing the beans to warm through.
  5. Add the fresh spinach and cook until wilted, about 2 minutes.
  6. Squeeze lemon juice over the dish before serving.
  7. Serve warm with crusty bread or over rice.

Notes

For a creamier texture, you can smash a few beans against the pan. Store in an airtight container for up to 4 days. For freezing, omit spinach and add when reheating.
