Description

These cheesy and crispy puffs are made from leftover mashed potatoes, perfect as a snack, appetizer, or side dish.


Ingredients

Main Ingredients

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheese (cheddar or mozzarella) (Cheddar adds flavor; mozzarella adds stretch.)
  • 1/2 cup breadcrumbs (Helps crisp them.)
  • 1/4 cup chopped green onions (Can substitute with chives.)
  • 1 large egg (Helps bind the mixture.)
  • to taste Salt and pepper
  • Oil for frying or cooking spray


Instructions

Preparation

  1. Preheat the oven to 400°F (200°C) or prepare a frying pan with oil.
  2. In a mixing bowl, combine the leftover mashed potatoes, shredded cheese, breadcrumbs, green onions, egg, salt, and pepper.
  3. Mix until well combined.
  4. Scoop spoonfuls of the mixture and shape them into small puffs or balls.
  5. If baking, place them on a baking sheet and spray the tops lightly with cooking spray. Bake for 20-25 minutes until golden brown.
  6. If frying, cook in hot oil until golden and crispy on all sides.
  7. Serve hot as a snack, appetizer, or side dish.

Notes

Store leftovers in an airtight container. They last 3–4 days in the fridge. Reheat in the oven or air fryer for best texture.
